Caramel Apple & Popcorn Chocolate Bark

Indulge in a delightful blend of textures and flavours with this Caramel Apple & Popcorn Chocolate Bark recipe, a treat that beautifully marries the crispness of fresh apples, the airy lightness of popcorn, and the rich depth of dark chocolate. Perfect for an afternoon snack or a party favour, this recipe features a healthier homemade caramel sauce that uses natural sweeteners and coconut oil for a guilt-free indulgence. The addition of Beanie’s Caramel Popcorn coffee elevates the chocolate to new heights, infusing it with a subtle, yet irresistible caramel note. Easy to prepare and even easier to enjoy, this chocolate bark will satisfy your sweet tooth while providing a touch of sophistication to your snacking routine.


  1. Make the Caramel Sauce by combining the coconut sugar, honey (or maple syrup), milk and coconut oil in a pan. Heat over medium-low heat, stirring frequently to prevent burning.
  2. Once the mixture starts to bubble, reduce the heat to low and let it simmer for about 5-7 minutes, stirring occasionally until it thickens slightly. It will continue to thicken as it cools.
  3. Remove from heat and stir in the vanilla extract and a pinch of sea salt, adding salt to taste (be careful not to burn your tongue!) Set aside to cool and thicken.
  4. Now, prepare the Chocolate Bark. Break the dark chocolate into pieces and melt it gently, stirring frequently until smooth. Whisk in the coffee granules, stirring until smooth and melted.
  5. Line a baking sheet or tray with baking paper.
  6. Pour the melted chocolate on top, spreading it with a spatula to an even thickness.
  7. Sprinkle over the air-popped popcorn over the chocolate while it’s still warm and melted, as well as the apple. Lightly press into the chocolate so it sticks.
  8. Using a spoon, drizzle the cooled caramel sauce over the popcorn, apple and chocolate.
  9. Place in the refrigerator for at least 1 hour or until the chocolate is fully set, before breaking into pieces. Best eaten day of making.

  • 1 cup air-popped popcorn -For the Chocolate Bark
  • One large apple, chopped -For the Chocolate Bark
  • 1/2 cup coconut sugar -For the Healthier Caramel Sauce (use shop-bought for a quicker snack!)
  • 1/4 cup honey or maple syrup -For the Healthier Caramel Sauce
  • 1/4 cashew milk -For the Healthier Caramel Sauce
  • 2 tbsp coconut oil -For the Healthier Caramel Sauce
  • 1 tsp vanilla extract -For the Healthier Caramel Sauce
  • Sea salt, to taste -For the Healthier Caramel Sauce
