
Caramel Apple & Popcorn Chocolate Bark

Easy to prepare and even easier to enjoy, this chocolate bark will satisfy your sweet tooth while providing a touch of sophistication to your snacking routine.
Method
- Make the Caramel Sauce by combining the coconut sugar, honey (or maple syrup), milk and coconut oil in a pan. Heat over medium-low heat, stirring frequently to prevent burning.
- Once the mixture starts to bubble, reduce the heat to low and let it simmer for about 5-7 minutes, stirring occasionally until it thickens slightly. It will continue to thicken as it cools.
- Remove from heat and stir in the vanilla extract and a pinch of sea salt, adding salt to taste (be careful not to burn your tongue!) Set aside to cool and thicken.
- Now, prepare the Chocolate Bark. Break the dark chocolate into pieces and melt it gently, stirring frequently until smooth. Whisk in the coffee granules, stirring until smooth and melted.
- Line a baking sheet or tray with baking paper.
- Pour the melted chocolate on top, spreading it with a spatula to an even thickness.
- Sprinkle over the air-popped popcorn over the chocolate while it’s still warm and melted, as well as the apple. Lightly press into the chocolate so it sticks.
- Using a spoon, drizzle the cooled caramel sauce over the popcorn, apple and chocolate.
- Place in the refrigerator for at least 1 hour or until the chocolate is fully set, before breaking into pieces. Best eaten day of making.
